I really don't even see it reducing your need for staff; it just adjusts their duties, therefore fulfilling its stated purpose, which would be a win.
Well, I think it is a good idea and money saver/stress reducer for the waitstaff and owner(s).
This would need to have a large test market before it can take off though. I foresee this starting in either an out-of-the-way metropolis (Kansas City comes to mind) or an country that is not adverse to technology (Japan comes to mind).
