Had burgers tonight btw...
My burger recipe:
2 pounds sirloin
1 pound regular hamburger (needs some fat content)
about 1/3 yellow onion, finely chopped
1 very large or 2 medium jalapenos, seeded and ribbed and diced
roughly 1/4 pound pepper jack cheese, diced into 1/4'' inch cubes
1 tsp mustard
1/2 tsp white pepper (stronger, kick it up more if you use ground black) and salt
1-2 tsp Worcestershire sauce
Combine and mix until it's uniform, then seperate into 8 equal parts and form into patties, cover any faces of cheese sticking out with meat so it doesn't all just melt out during cooking.
