I need ideas for the potluck we're having at work on Friday. Supposed to be tropical themed... or some other lame ***like that. I almost just decided to make baked ziti again since they all loved it and it's mad easy to make but... hrm! Ideas please!?

But eh, what's the point in leaving? It's going to be hard no matter where she is. But she'll probably have an easier time with health care there, so maybe you should just do it. >.> If she relies on you, best put her in a home before you leave if you don't. If you're going with the theme, you could always look into making some upside down pineapple cake or at least using those tropical fruits. Also, if you have the materials, you could try your hand at making some jerk chicken.

I thought about the pineapple cake, Mag. Love that stuff, so it's a possibility. That idea right there is awesome too, Liela. Someone else is already doing a "fruit salad" but that's more creative! I almost said eff it and ordered one of those edible arrangements because I've waited too long to decide, lol.
Jerk chicken? :o OOH LOOK! I found a berry fish on a giant sugar cookie or something! Erm, ok, I'll be back again.

Recipe. Basically, it's a Jamaican barbecue chicken. Not sure what you would serve with it (as I've only had it in wing form), but I think you'd typically want to stick to that vile grain known as rice.
edit: Says here you could make jerk chicken sandwiches. Also, they might have jerk spice mixes at your local grocery store.

I found a few, some of them might make good sides to Mag's jerk chicken. Although if it's a potluck someone else is sure to have sides? I don't know, but that jerk chicken looks tasty!

Thanks you guys. :D I might do the chicken or something like it. Mango salsa was a thought too. Make a mango salsa myself and put it over baked chicken tenders or something. Little on the simple side, but tasty?

:-( Wish I could help, Kuji. I honestly have no idea though. Maybe take her to Canada on a short vacation so she can see that it's not so scary? Then after she's been there and it's familiar to her, maybe she won't be so panicked about living there. I don't know. /comfort.
