F.L.C.L. I loved how random it was. It helped me threw a very tough time in a friends life when we needed some good WTF was that moments. All snuggeled up on the couch laughing our arses off or staring at each other going "Que?"
After that I would say Macross origional.
and third in my list would be "Gun Sword" I know a friend that puts every condement available on every food he eats after watching that anime we always called him Van afterwards. Those are my favs
Ghost in the Shell movies + series. They are some of the most well done animes in my opinion. It's also what I hope the future will be like.

For how large the cast is, they do an amazing job of giving them all a backstory and flushing out each individual person's character.

A short, 13 episode, series. What drew me in was the, at least attempted, use of real world physics in the show. none of this instant-stop, sound in space, etc... stuff as seen in almost all other space anime.

A unique anime, in that there is no "main" character. The story is told from multiple viewpoints and multiple time-points, jumping back and forth through an inter-weaved story.
Speaking of Ghost in the Shell, my new all-time favorite anime, Moribito: Guardian of the Spirit, was directed by the same director of Ghost in the Shell: Stand Alone Complex, Kenji Kamiyama.

It's based on a series of 10 novels written by Nahoko Uehashi; the first two novels have been translated and published here in the US, but they've stopped completely due to a lacking audience.... Which freaking sucks, buuut this is actually one of the rare cases in which I like the anime better than the original novel (or manga). The characters are so much more developed, and the few action scenes are intense and immensely detailed.
One interesting thing to note that bumped this anime to #1 on my list (sorry The Third ~Aoi Hitomi no Shoujo) was the fact that there was absolutely no fanservice. I mean, yeah, it's about a 30-year-old female spearwielder, but there's no unnecessary scenes that make you roll your eyes, just a fluid and enjoyable plot that you never want to end.
oh ya, and chobits is hilarious....and Vandread was a good one, so was Cowboy Bebop..and "Those Who Hunt Elves" very funny anime series there lol and Area 88 (if anybody has played the old old SNES game "UN Squadron"..it was based on that anime)

I see a lot of DBZ showing up, I never liked that program at all, don't know if it was the style of art, or watching all the muscley guys fighting, but it never interested me at all. It's kinda strange cause I liked all sort of anime as a child, and DBZ was a show that was on a lot whilst I was growing up. I was always more into my Pokemon, Beyblade, Digimon etc. Not dissing anyone for liking it, I'm just not too sure how it's so appealing to people.
I'd also like to add Beyblade to my list I made earlier, it's a great show ^.~
Chobits is a guilty pleasure use guys have. You either found it randomly or an ex-gf had you watch it.. :3

Personally I consider kimi ga nozomu eien (god that's a real tear jerker), Hayate no gotuko, and Kaichou wa Maid-sama much more guilty pleasures. Though still not really sure what that last one is about as I've only seen like 3 episodes
Magic Knight Rayearth was a good view, if you haven't seen it, they got Season 1 of it on Hulu now, so no excuse on that part. Azumanga Daioh is a definite must-see series as well
Others i've liked include: Inuyasha, the entire Dragonball Saga (the original and Z moreso than GT...), Sailor Moon, FMA, Full Metal Panic (still need to watch through Fumofuu and TSR ._.) Gundam (mostly Wing/Seed/Seed Destiny, though had no real issues with 00) Code Geass (need to borrow that from a friend, since i missed the last few episodes on AS... curse drinking lol. Uh lets see what else... friend of mine got me into Fate/Stay Night (which was a good series as well), School Rumble was decent (thanks Hulu for that one), Evangelion was kinda overated, and just plain weird towards the end... Bleach (at the start) was ok, too much filler is killing it though... couldn't stand Naruto or One Piece (though that was the 4Kids dub... LOL at that)
Oldies and goodies include Outlaw Star, Utawaremono (i know i screwed the spelling up on that one...) Crest of the Stars was an ok series as well as Galaxy Angel. Theres some I've heard are good, but haven't had the chance to see yet, like Excel Saga, and the 2nd season of Haruhi Suzumiya... (tho from the Endless 8 talks, many people got turned off by it), though definetly recommend Season 1 of it at the least
Anyways, I could go on all night if I had the chance, but I think I'm gonna go watch something before I go to sleep <.>
I could go on and on, but meh lol. Then again, most all of the series that were aired on Cartoon Network (either Toonami or AS) I watched at one point or another
Ahh yeah, one more that is a decent watch: Sola, friend of mine got me into it, was a good series as well

Many may know this as Teknoman, which aired on UPN(From Saban) back in the mid 90's. It was sort of a follow up to the old Tatsunoko series Tekkaman The Space Knight(Which I also have on boot-leg DVD, and it isn't very good).
Needless to say, it is considered by many to be one of the greatest hand-drawn series of it's time. The story is by far one of the best to be told robot series without lagging with a ton of crap filler episodes(Looking at you Gundam).
Tekkaman Blade and company do appear in Banpresto's Super Robot Wars J for the GBA and Super Robot Wars W for the DS
And was an addition to the North American release of Tatsunoko Vs. Capcom
