Did you try looking on the FFXI website where they created a page with all the detailed instructions?

I expected it would be an option at login before checking, like login/change char/delete char. Kinda weird how they added it.

You talk to the Ancestry Moogle in one of the main cities. Don't worry, they give you 2 weeks to make the changes before you 'waste' your money. You're safe for little while
