Really you use need that little bit of acidity to help the egg whites set. It's not even a vital thing. I've done without. ...dammit, now I think I might have to have breakfast food for dinner. But I don't have any breakfasty meat at home. Well, I've got chicken. Maybe I'll have a mother-daughter reunion for dinner.
