For the "Starting Gift" you could pick the Master key (Thief starts with this already) or the Old Witch Ring which lets you talk to an npc later on in the game the rest of the gifts are potions/bombs so not really worth it over Key/Witch

Yeah didn't want to start as Thief because I remember seeing someone say that a few days ago, so the ring is the best to pick if I don't want to skip everything?

For what it's worth, you can indeed slay that demon with your barefist or that crappy broken sword, but the endeavor will take you about 25 minutes if you don't die, and all you get is its crappy maul weapon. You can also start with the black fire bombs, which will do 195 damage per bomb to it.

Moon, a bit of advice.

If you feel like you're up against an unbeatable foe, then you know something is wrong. You either avoid it and save it for later when you're more powerful, or you find a way to beat it now.

I know the game has a reputation for being difficult, but it really isn't. It's more of a thinking game than a crush your corpse game. As long as you pay attention to your surroundings and go at your own pace (which should be a bit slow) then you'll have minimal issues.

Just make sure you block, and when you aren't blocking lower your shield to recover stamina. Stamina is very important to maintain. If you can avoid an attack even better, that will create an opening for you most of the time so you can attack. Make sure you lock on, and try to attack vulnerable parts of the enemy. hitting the back is usually an open spot, and if you line it up correctly (and if you're fighting an enemy that has a normal back) then you can execute a backstab for huge damage.

More experienced players can execute a parry and then a riposte, it deals more damage than the backstab but is more difficult to do without getting hit.

but yea,

the tutorial of the game basically teaches you everything you need to know throughout the whole game.

You learn about attacking, heavy attacks, blocking, running, locking on, using items, opening the menu, parrying + reposte, backstabbing, plunging, but more importantly it presents you with a challenge.

You encounter the demon with a weak weapon, and you obviously can't kill it (unless you're determined enough to, then you'll get a bonus weapon as your reward that you can't equip for 40 levels). You have to survive and normally you'll see the exit. So this teaches you to run from battles you can't win and save them for later. Throughout the level you are given your shield and weapon, teaching you how to equip it and using the directional buttons to change your shields and weapons, magic, and items. You get 2 slots for shield and weapon and 5 slots for items. You can manage these in your equipment menu.

Before you enter the 2nd fog door it tells you about plunging onto enemies for huge damage, giving you a high ledge to drop down onto him dealing 1/3-1/2 of its HP. It's a weak version of the real thing, but it's still powerful enough to destroy you if you aren't careful.

The fight teaches you to avoid strong attacks, that you can't just block everything and you'll be expected to avoid an attack completely. It also teaches you to find the enemies weak spot and to learn their move set so you can find an opening to attack.

So what exactly does humanity do? I know I can reverse hollowing and walk around and NPCs and stuff; I've read Kali's posts on that several times. Kindling a Bonfire, and eventually making them give me more Estus Flasks, but what else does it do?
