It's been the biggest nightmare to actually get right, it's always either still raw more or less, or the skin gets all crusty and burnt.
Golden brown and crispy, but not crusty, skin and cooked all the way through.
Nice man. I have a very hard time cooking that myself. how long did you cook it for?
Edited so nothing can be twisted by the evil people on here.

Golden brown and crispy, but not crusty, skin and cooked all the way through. I saw an episode of Good Eats where he made fried chicken in a frying pan of all places. I personally don't like it, but I've grown less tolerant to fried foods as of late. So I guess I'm asking if you deep fried it or pan fried it.

Watermelon is ok, but such a sticky mess. In all honesty, honeydew is cleaner, crisper, and better-tasting.
Then again, I'm the nuthouse who thinks bacon is only meh, so my vote doesn't even count! Poor Annika though, sweet girl has no idea how delicious pumpkin pie is. ~.^

Nice man. I have a very hard time cooking that myself. how long did you have it in for? 8 minutes on one side, 5-8 on the other (8 for first batch, second was done in 5).
Here's how I did it.
First it soaked in spiced buttermilk over night in a gallon freezer bag. I intended to soak it for only an hour or two, but ***came up and I couldn't cook it last night.
I used a heavy skillet, with oil deep enough to cover half the chicken, but not cast iron as I don't have one. A thermometer to monitor the oil temp, and I cooked it at a much lower temp than all the recipes usually call for. I let the oil hit 320 and then started putting it in, temp dropped to about 275, and I brought it back up to ~310 over the next 8 minutes while it cooked, and then flipped. Temp dropped to about 280 and I just slowly brought it up to 310 again, then maintained the 310-320 range until it was done. I used a thermometer to check for the chicken's temp, and even sliced one open just to be sure (I've been fooled by thermometers before)
I've finally conquered fried chicken! D:!

Fried chicken in the deep fryer is just a lost cause for me.. I've at least gotten close in skillet before, just never 'best of both worlds' (doneness, good skin). It's not a shallow pan though.. If there were a zombie apocalypse, it'd make a decent weapon if that's all you had. I had to pound on it for like a minute with a hammer as hard as I could to fix the bottom when it started to round out and get dangerous to have on the stove.

I was actually watching the second half of that episode on Youtube while I read your response to Dread's post, and you pretty much did exactly what Alton was suggesting. Like to the T. When it comes to fried foods, I'm usually not one to attack it. Well, I did make tempura that one night... which was awesome. Still, I'm guessing your chicken was da bomb. I never liked the Colonel anyway with his wee beady eyes...

Well I do love Alton.. He should have much more of a time slot than he does.. He's influenced my cooking more than all the other chefs on FN combined.
I didn't set out to copy him or anything though. I've been trying to get it right and experimenting over the years. I still have room for improvement, but the major things are there. I live in the south, there is no good reason for not being able to cook some good fried chicken. But up until today, I couldn't.

Not only does he tell you what works, but he tells you why and knows of the science behind the cooking, which is rare to find. I've tried a few of his recipes, but there are so many yet I haven't tried.

Yeah it's much more helpful to know why I am or am not doing something, than just being told that I have to (not) do said thing. Then I can apply that knowledge to other parts of cooking that he didn't get to mention due to time constraints.

money goes to bullets instead of alex. There goes that idea. :x level alch like i did no worry bout ammo then
This is a thread that I found on another website I post at. It can be really really interesting. I thought it deserved a place here.
Post your random thoughts for the day here, or anything else that intrigues you.
For starters, is it possible to give constructive critism to someone who doesn't have a neck? I totally just walked by a girl who didn't. Someone isn't getting a necklace for Valentines day!
And who decided black and white can't be colors? I want to say a racist. I really do.
