Oh, no doubt. I love me some pork ribs. Personally, I find them superior to beef. But I've always been told that it's blasphemous to go with pork instead of beef when making barbecue in Texas. Also, something about rubs v. sauce. But if you're smoking them.... Yes. I suddenly wish I was in Texas right now.
Smoking them with mesquite. As for beef over pork, I love pork, I love beef a lot more, but I still love pork. If I had the choice, I probably would have gotten beef ribs, but there were none and I really wanted ribs.. No loss to me..
As for sauce vs. rub it depends on who you ask really.. Alton Brown said that sauces are meant to (not exact words of course) hide/cover up a piss poor job of picking and cooking the meat... I.E. real BBQ done right doesn't need a sauce.
For the most part I agree, but growing up my family who did BBQ almost always were so shitfaced they couldn't see straight, so needless to say, I've developed a taste for char (read: burnt BBQ sauce) as well as all kinds of meat being slathered in sauce.
These ribs however, are just going to be done with a rub.
