Well today we're going to make quesadillas. So first thing's first let's gather up all our ingredients, we'll need olive oil, 1-2 chicken breasts, 1/2 an onion sliced thin, fajita seasoning (you can make your own or buy those packets, doesn't matter) 2/3 cup water, grated cheese (cheddar and monterrey jack work well, 50/50 ratio is okay) and tortillas.. I prefer to make my own tortillas.
30 mins ahead or so mix the water and the fajita seasoning in a large bowl, then cover the chicken in the mix and let it marinate.
Okay so first in an oven proof skillet we're going to put in a tablespoon of olive oil and heat it up, then we're going to saute the onions just until they start to change color from white to translucent, about 1 minute. Once they're done, push them to the outside of the pan. Now sear one side of the chicken (reserving the seasoning mix in the bowl) for a couple of minutes, then turn, let cook 2 more mins, pour in the seasoning mix, cover and stick in 375 degree oven for about 45 minutes.
Put a fine mesh strainer in a bowl and remove chicken from oven. Place chicken on cutting board and let rest for 5-10 minutes, pour the onion and juice through the strainer, saving both. Slice chicken thin and put in a bowl, dump in the onion and add a tablespoon or so of the liquid, mix well. If you want the meat to have a a stronger flavor, add more of the liquid.
Now Put a skillet over medium-high heat, take a tortilla, put down a thin layer of cheese on one half of the tortilla, put a tablespoon or so of meat over the cheese, then top off with more cheese, fold in half and press it together for a second. Place tortilla in hot frying pan and place a heavy sauce pan or cast iron skillet over the top, cook for about 30-45 seconds, flip and repeat.
