I do a non-frying version, but basically the same thing. Give it a quick egg bath, bread it in something (crushed pretzel is good, flour with parmesan cheese and spices is also good), bake it until crispy.

It's a freshwater whitefish, mild taste. Takes well to pan frying, also makes excellent fish tacos.
