We batter our catfish here in cornmeal and fry it. Some of the US thinks it's weird apparently.
I do a non-frying version, but basically the same thing. Give it a quick egg bath, bread it in something (crushed pretzel is good, flour with parmesan cheese and spices is also good), bake it until crispy.
No idea what a tilapia even is.
It's a freshwater whitefish, mild taste. Takes well to pan frying, also makes excellent fish tacos.

I've never tried swordfish, but I'd like to. Swordfish is to tuna what beef is to chicken. It'll make you feel manly or something. But for real, it's firmer than say tuna or salmon, with kind of like, a milder taste. Often grilled and seasoned too, so you end up with what I would describe as a nice fish steak.

That's largely not even legal to import the authentic thing. The taste of dolphin vs the taste of fugu? Hmmm
I'm referring to its legality to import.
Also, it's likely exaggerated cost-to-flavor ratio.

What type of shark did you have drac and KN? There is mostly just whales this far north Shark steaks, on occasion.
Tried shark fin soup, didn't care for it either.

It was likely Gummy Shark, they just call it flake
