It's not rotten, it's fermented, lol. LOTS of foods are made this way. For example: alcohol, corn syrup, cheese, chocolate, coffee beans, Sauerkraut, some Ketchups, Sourdough bread, Strained yogurt, yogurt, Tabasco sauce, Worcestershire sauce, Soy sauce.
