1st. Don't get chunky peanut butter. Make sure to get the smooth/creamy kind.
2nd. Pancakes' texture can vary greatly depending on how much water you use, how much you stir it (can make them tough if you overstir the batter), and how hot the griddle is (don't want them to cook too fast).
1st. Ruler doesn't know what he's talking about. Chunky is clearly superior to creamy.
2nd. Also, if you see lumps in your batter, it's okay and wholly necessary. Trust me, when you cook it, they'll come out. As Ruler mentioned, you can overstir it and that leads to a nasty thin mess.
3rd. When cooking, the best way to indicate when to flip is when the top part of the pancake is covered in bubbles that popped, so it basically looks like it has a ton of craters in it. Also, use a lot of cooking spray or butter while cooking to make sure it doesn't stick to the pan.
