My lunch today was a bit of an experiment :o
I cooked 1/2 cup of quinoa on the stove while I diced up a red bell pepper, cut open an avocado, peeled it and mashed it, added a dash of salt, sprinkled some lemon pepper, and squeezed half a lime. I opened a can of tuna, drained it, shredded the big chunks, tossed it in and stirred, adding the red bell pepper and stirred in the cooked quinoa .
It's a bit of what you'd call green mush, but it tastes wonderful.
$1.56 per meal, 3 servings, maybe 2 depending on the person, made about 4-5 cups of yummy slop.
Now to think about what it would be good with, it's pretty good on it's own though. I never knew quinoa was so filling.
